Chicken Adobo

This is a great Filipino dish that my family discovered while we lived overseas when I was younger. I now make it for my daughter and I and she absolutely loves it!

Ingredients
1/4 c. cider vinegar
1/4 c. white vinegar
1/2 c. soy sauce
crushed garlic
1/2 tsp. peppercorns
2 bay leaves
1 pkg (about 6) bone in chicken legs
Rice

~Mix all ingredients together and marinate for 1-3 hours.
~Put into a deep pan and bring to a boil. Lower and simmer covered for 30 mins.
~Uncover and simmer an additional 20 mins. The chicken will start to fall right off of the bone.
~Serve with rice.

Chicken Wings

These are a great family meal and finger food which kids always love. We pair them with a white or brown rice.

Ingredients:
1 large package of chicken wings
1 cup soy sauce
1 cup sugar
1 cup water
1 small can pineapple juice
2 tsp garlic powder

~Mix together everything and marinate the wings for 12-24 hours.
~Heat the oven to 350.
~Pour everything into a roasting pan and cook covered for 1 hour.
~If after an hour there is still a lot of juice left drain some out.
~Cook for another hour uncovered.

Taco Dip

I find this recipe great because it can be used for so many things. A simple dip as is, topped with veggies and eaten with chips or used in burritos.

Ingredients:
3 lbs extra lean hamburger
1 chopped onion
1 chopped green pepper
2 packages taco seasoning (I use Ortega)
1 cup water
1 can refried beans
2-8oz jars taco sauce (I use Ortega, 1 hot and 1 mild)

~Brown hamburger with onion and green pepper (I omit green pepper).
~Add in the taco seasoning, water and refried beans. Mix well.
~Add in taco sauce and let simmer for 45 mins.
~I split it up into single or family size servings and then freeze.

Peanut Butter Cookies

These are a great dairy free cookie. I personally don't care for PB cookies, but both my daughter and husband enjoy these.

Ingredients:
2 cups peanut butter
1/4 cup white sugar
1/2 cup brown sugar
2 eggs

Mix together and bake at 350 for 14-16 mins.

Spiced Applesauce Bread/Muffins

This recipe has become a staple in our household. I make up a batch and make them into mini muffins, freeze them and then we just pull out however many we need when we need them. My daughter would eat them all day long if I let her.

The original recipe is for a bread, but I have made them into bread, muffins and mini muffins. All work great. The orginal recipe also had milk in it but I just cut it out and it tastes just as great. The sliced up apple is something I added.

Ingredients:
1 1/2 cup applesauce
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup vegetable oil
2 eggs
2 cup flour
1 apple cut chopped-the size I do depends on the what I am making.
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/4 tsp. salt

~Preheat oven to 350.
~Mix dry ingredients in a bowl.
~Mix together all other ingredients, add in dry ingredients mixing well.
~Add in chopped apple.
~Bake for 15-18 mins for mini muffins and 60 mins for bread.

I'm back!!

It's been almost a year to the day since my last posting. I apologize.

I was still giving out this blog address for some basic info but I just didn't have the time and I admit motivation to do much past that. I am back though and hope to really make this blog into something useful.

I will be posting recipes I have found along the way, tips I have stubbled across and hope to hear from other parents as well! I still find that there is a lack of information and good recipes out there so send me what you have!!
